Another week is here!
I'm sharing my most frequently made side dish. This recipe came from my mom, and you can tell it's well-loved from the picture of her cookbook below!Here's the recipe:
Rice Pilaf
(From: Cher's Kitchen)
Ingredients:
-2 Tbsp. butter
-1/2 cup finely diced onions
-1/4 cup minced parsley
-3/4 cup diced celery
-1 cup long-grain rice
-1/2 tsp. salt
-1 (14 oz.) can chicken broth (or bouillon crystals and water)
-3/4 cup water
-1 (4 oz) can sliced mushrooms
Steps:
-In a 2 qt. casserole, blend butter, onion, parsley and celery. Microwave (high) 3-4 minutes, stirring once.
-Combine with rice, salt, chicken broth, water, and undrained mushrooms. Microwave (high) covered, 10-12 minutes, rotating dish 1/4 turn halfway through cooking.
-Rest; covered, 5-10 minutes before lifting lid. If rice isn't tender, recover and cook 1-3 minutes longer. Serves 3-4.
